Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 lb ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (optional)
  • 1/4 cup water
  • Shredded cheese (optional topping)
  • Diced tomatoes (optional topping)
  • Sliced avocado or guacamole (optional topping)
  • Sour cream or Greek yogurt (optional topping)
  • Chopped cilantro (optional topping)
  • Jalapeño slices (optional topping)
  • Lime wedges (optional topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick each sweet potato several times with a fork.
  3. Rub each sweet potato with olive oil and season with salt and pepper.
  4. Place the sweet potatoes on a baking sheet and roast for 45-50 minutes.
  5. While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat.
  6. Add the ground beef or turkey and cook until browned, about 5-7 minutes.
  7. Stir in the taco seasoning, black beans, and corn.
  8. Add 1/4 cup water and let simmer for 5-7 minutes.
  9. Remove sweet potatoes from the oven, slice open, and mash the insides.
  10. Spoon the meat mixture into each sweet potato.
  11. Top with desired toppings and serve warm.
