- 4 medium sweet potatoes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 lb ground beef or turkey
- 1 tablespoon taco seasoning
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (optional)
- 1/4 cup water
- Shredded cheese (optional topping)
- Diced tomatoes (optional topping)
- Sliced avocado or guacamole (optional topping)
- Sour cream or Greek yogurt (optional topping)
- Chopped cilantro (optional topping)
- Jalapeño slices (optional topping)
- Lime wedges (optional topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Prick each sweet potato several times with a fork.
- Rub each sweet potato with olive oil and season with salt and pepper.
- Place the sweet potatoes on a baking sheet and roast for 45-50 minutes.
- While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat.
- Add the ground beef or turkey and cook until browned, about 5-7 minutes.
- Stir in the taco seasoning, black beans, and corn.
- Add 1/4 cup water and let simmer for 5-7 minutes.
- Remove sweet potatoes from the oven, slice open, and mash the insides.
- Spoon the meat mixture into each sweet potato.
- Top with desired toppings and serve warm.
