Instructions
- Cook tortellini according to package instructions in a large pot of salted boiling water for 3-5 minutes until they float and are tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the ground meat, breaking it apart with a spatula. Sauté until golden brown and fully cooked.
- Drain excess fat, then stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5-7 minutes.
- Combine cooked tortellini with the meat mixture, mixing gently to ensure all pasta is coated.
- Serve hot, topped with shredded cheddar cheese, sour cream, and chopped cilantro.
