  • 4 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sliced mushrooms
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with garlic powder, black pepper, and salt. Add them to the skillet and cook until golden brown, approximately 5-6 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. Add the sliced mushrooms, diced bell peppers, and diced onions to the skillet, sautéing them for about 4-5 minutes until they soften.
  6. Return the chicken to the skillet and pour the chicken broth over it.
  7. Sprinkle the shredded Monterey Jack cheese over the chicken and vegetables.
  8. Cover the skillet with a lid or aluminum foil and transfer it to the oven. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Serve warm with your favorite sides.
