- 4 boneless, skinless chicken breasts
- 1 cup shredded Monterey Jack cheese
- 1 cup sliced mushrooms
- 1 cup diced bell peppers
- 1 cup diced onions
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with garlic powder, black pepper, and salt. Add them to the skillet and cook until golden brown, approximately 5-6 minutes per side.
- Remove the chicken from the skillet and set aside.
- Add the sliced mushrooms, diced bell peppers, and diced onions to the skillet, sautéing them for about 4-5 minutes until they soften.
- Return the chicken to the skillet and pour the chicken broth over it.
- Sprinkle the shredded Monterey Jack cheese over the chicken and vegetables.
- Cover the skillet with a lid or aluminum foil and transfer it to the oven. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Serve warm with your favorite sides.
Notes
Allow the chicken to rest for a few minutes after cooking for juicier results.
