  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1/2 teaspoon chili flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Gather your produce and tools. Wash and pat dry mangoes, cucumber, red bell pepper, and cilantro.
  2. Peel the mangoes, cut around the pit, and dice the flesh into even cubes. Dice the cucumber and red bell pepper to a similar size.
  3. Combine diced mango, cucumber, red bell pepper, red onion, and cilantro in a large mixing bowl.
  4. In a small bowl, whisk together lime juice, fish sauce, honey, and chili flakes until the honey is fully incorporated.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Let the salad rest at room temperature for about 10 minutes before serving.
  7. Serve chilled or at room temperature, adjusting seasoning as needed.
