Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup creamy natural peanut butter
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In a large skillet over medium-high heat, heat the vegetable oil and add the chicken.
  3. Cook until browned and cooked through, about 5 to 7 minutes. Remove chicken and set aside.
  4. Reduce heat to medium and sauté garlic in the same skillet until fragrant.
  5. Stir in soy sauce, peanut butter, and coconut milk until smooth.
  6. Return chicken to the skillet, stir to coat with sauce, and simmer for a few minutes.
  7. Serve warm, garnished with chopped peanuts or fresh cilantro.

Notes

Allow chicken to rest at room temperature for even cooking. Adjust sauce consistency with water or coconut milk as needed.
