Description

Decadent cookies with crispy edges and soft centers, enveloped in rich ganache, perfect for celebrating love and special occasions.


Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)

Instructions

  1. Prepare the chocolate dough: Cream butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add egg and vanilla, mixing until combined.
  3. In a separate bowl, whisk dry ingredients and gradually mix into the butter mixture.
  4. For the pink dough, repeat the creaming process with the same ingredients.
  5. Combine dry ingredients for the pink dough and mix in until just combined; set both doughs aside.
  6. Chill both doughs in the refrigerator for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Use a cookie scoop to form balls from the chocolate dough and press a thumbprint in each.
  9. Layer the pink dough on top of the chocolate dough and bake for 10–12 minutes.
  10. Prepare the ganache by heating cream and pouring it over chopped chocolate; stir until smooth.
  11. Once cooled, fill each cookie with ganache and decorate as desired.

Notes

Chilling the dough is essential for better texture. Use quality chocolate for ganache for best results.
