- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup diced strawberries (fresh or freeze-dried)
- 1 cup chocolate chips (for melting)
- Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy (3-5 minutes).
- Beat in the egg and vanilla extract until glossy and smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until combined.
- Fold in the diced strawberries.
- Scoop the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are golden.
- Allow cookies to cool completely.
- Melt chocolate chips until smooth and dip each cookie halfway into the chocolate.
- Sprinkle with additional toppings if desired and let the chocolate set before serving.
Notes
Serve warm with a scoop of vanilla ice cream or as a sweet gift wrapped in cellophane.
