  • 1 cup diced strawberries (fresh or freeze-dried)
  • 1 cup chocolate chips (for melting)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy (3-5 minutes).
  3. Beat in the egg and vanilla extract until glossy and smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until combined.
  5. Fold in the diced strawberries.
  6. Scoop the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow cookies to cool completely.
  9. Melt chocolate chips until smooth and dip each cookie halfway into the chocolate.
  10. Sprinkle with additional toppings if desired and let the chocolate set before serving.
