- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 2 teaspoons vanilla extract
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, milk, and vanilla extract.
- Gradually pour the wet mixture into the dry ingredients and mix until just combined.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Use a slotted spoon to remove the beignets and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
Fry in small batches for even cooking. Dust with powdered sugar just before serving to prevent melting.
