Ingredients

  • 1 cup mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large pan over medium heat until shimmering.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the broccoli, mushrooms, bell pepper, and carrot, and stir-fry for 5 to 7 minutes until tender yet crisp.
  4. Pour in the soy sauce and toss to coat the vegetables evenly, cooking for an additional 2 minutes.
  5. Season with salt and pepper as desired and stir to combine.
  6. Serve hot over cooked rice or noodles.
