Ingredients

- 2 cups broccoli florets
- 1 cup mushrooms, sliced
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat the olive oil in a large pan over medium heat until shimmering.
- Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the broccoli, mushrooms, bell pepper, and carrot, and stir-fry for 5 to 7 minutes until tender yet crisp.
- Pour in the soy sauce and toss to coat the vegetables evenly, cooking for an additional 2 minutes.
- Season with salt and pepper as desired and stir to combine.
- Serve hot over cooked rice or noodles.
Notes
Prep all vegetables ahead of time for an easier cooking process. You can customize with other veggies or proteins as desired.
