- ⅓ cup melted unsalted butter
- 1.5 teaspoons cinnamon (divided)
- ½ teaspoon salt
- ½ teaspoon pepper
- ⅓ cup maple syrup
- 2 tablespoons additional maple syrup
- ⅓ cup chopped walnuts
- 1 teaspoon thyme
Instructions
- Preheat your oven to 400°F.
- Clean the sweet potatoes thoroughly and cut them into ½-inch thick rounds.
- In a mixing bowl, combine the sweet potato rounds with melted butter, 1 teaspoon of cinnamon, salt, and pepper. Stir until evenly coated.
- Arrange the seasoned sweet potatoes on a parchment-lined baking tray in a single layer.
- Bake for 25 to 30 minutes until fork-tender.
- In another bowl, combine additional maple syrup, walnuts, remaining cinnamon, and thyme.
- Once sweet potatoes are done, sprinkle the walnut mixture on top and return to the oven for an additional 8 to 10 minutes.
- Serve warm, optionally garnished with crumbled feta cheese.
