  • ⅓ cup maple syrup
  • 2 tablespoons additional maple syrup
  • ⅓ cup chopped walnuts
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 400°F.
  2. Clean the sweet potatoes thoroughly and cut them into ½-inch thick rounds.
  3. In a mixing bowl, combine the sweet potato rounds with melted butter, 1 teaspoon of cinnamon, salt, and pepper. Stir until evenly coated.
  4. Arrange the seasoned sweet potatoes on a parchment-lined baking tray in a single layer.
  5. Bake for 25 to 30 minutes until fork-tender.
  6. In another bowl, combine additional maple syrup, walnuts, remaining cinnamon, and thyme.
