Ingredients

- 1 lb cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup heavy cream or sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place a heavy-bottomed pot on medium heat. Add a drizzle of olive oil and sauté diced onion and minced garlic for about 3–4 minutes until translucent.
- Add shredded chicken, white beans, corn, cumin, and chili powder to the pot and stir.
- Pour in the chicken broth and bring to a gentle simmer; cook for about 15 minutes.
- Stir in heavy cream and season with salt and pepper; heat for another 5 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
Use rotisserie chicken for a quicker preparation. Adjust seasoning to taste.
