- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tsp Italian seasoning
- 8 oz lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil for garnish
- Olive oil or butter for sautéing
Instructions
- Heat a large, heavy-bottomed pot over medium heat and add olive oil or butter. Sauté the onion and garlic until soft and fragrant, about 3-4 minutes.
- Add chicken broth, diced tomatoes, and Italian seasoning. Bring to a gentle boil and let it bubble for about 5 minutes.
- Add cooked, shredded chicken and broken lasagna noodles to the pot. Simmer uncovered for 10-12 minutes, stirring occasionally.
- Once the noodles are tender, lower heat and stir in mozzarella and Parmesan until melted and creamy.
- Pour in heavy cream, stirring until fully incorporated. Season with salt and pepper to taste.
- Ladle into bowls, garnish with fresh basil, and serve hot.
Notes
For a lighter version, substitute half-and-half for heavy cream. You can also use rotisserie chicken to save time.
