White Chicken Lasagna Soup

A comforting and creamy soup that captures the nostalgic flavors of lasagna without the fuss of baking.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Olive oil or butter for sautéing

Instructions

  1. Heat a large, heavy-bottomed pot over medium heat and add olive oil or butter. Sauté the onion and garlic until soft and fragrant, about 3-4 minutes.
  2. Add chicken broth, diced tomatoes, and Italian seasoning. Bring to a gentle boil and let it bubble for about 5 minutes.
  3. Add cooked, shredded chicken and broken lasagna noodles to the pot. Simmer uncovered for 10-12 minutes, stirring occasionally.
  4. Once the noodles are tender, lower heat and stir in mozzarella and Parmesan until melted and creamy.
  5. Pour in heavy cream, stirring until fully incorporated. Season with salt and pepper to taste.
  6. Ladle into bowls, garnish with fresh basil, and serve hot.

Notes

For a lighter version, substitute half-and-half for heavy cream. You can also use rotisserie chicken to save time.
