Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced onion and minced garlic. Sauté for about 4-5 minutes until translucent.
  3. Stir in the dried basil, oregano, and red pepper flakes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Introduce the shredded chicken and lasagna noodles, then simmer for 10-12 minutes.
  6. Reduce heat to low and mix in the ricotta cheese and spinach until the spinach wilts.
  7. Add the mozzarella cheese and stir until it melts.
  8. Season with salt and pepper to taste and serve hot, garnished with grated Parmesan cheese.

Notes

For added richness, consider adding a dash of heavy cream or substituting chicken with ground turkey or sausage.
