- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 4 cups chicken broth
- 2 cups cooked, shredded chicken
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups spinach
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat until it shimmers.
- Add the diced onion and minced garlic. Sauté for about 4-5 minutes until translucent.
- Stir in the dried basil, oregano, and red pepper flakes.
- Pour in the chicken broth and bring to a gentle boil.
- Introduce the shredded chicken and lasagna noodles, then simmer for 10-12 minutes.
- Reduce heat to low and mix in the ricotta cheese and spinach until the spinach wilts.
- Add the mozzarella cheese and stir until it melts.
- Season with salt and pepper to taste and serve hot, garnished with grated Parmesan cheese.
Notes
For added richness, consider adding a dash of heavy cream or substituting chicken with ground turkey or sausage.
