Description

A hearty stew made with tender beef chuck, vegetables, and rich beef broth, perfect for chilly days.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
  2. Add the beef pieces to the pot and cook without stirring for a few minutes until browned.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, sauté the chopped onion and minced garlic until translucent.
  5. Stir in the tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Season with salt and pepper.
  6. Return the beef to the pot and pour in the beef broth. Bring to a gentle simmer.
  7. Cover and cook for approximately 1.5 hours.
  8. Add the diced potatoes and sliced carrots, cover, and simmer for an additional 30-45 minutes.
  9. Remove bay leaves, taste, and adjust seasoning as necessary. Serve hot.

Notes

Browning the beef and allowing the stew to simmer longer enhances the flavors.
