Description

A light and fluffy bread option that’s perfect for those watching their carbohydrate intake.


Ingredients

  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (aluminum-free preferred)
  • ¼ cup melted butter or coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • ½ cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it.
  2. In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
  3. Add in the baking powder, salt, and xanthan gum (or psyllium husk powder). If using almond flour, mix it in at this stage.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake for 35-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
  6. Allow cooling in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use room temperature ingredients for a smoother batter and allow the bread to cool completely before slicing to prevent crumbling.
