- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (aluminum-free preferred)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- ½ cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it.
- In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
- Add in the baking powder, salt, and xanthan gum (or psyllium husk powder). If using almond flour, mix it in at this stage.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 35-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
- Allow cooling in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use room temperature ingredients for a smoother batter and allow the bread to cool completely before slicing to prevent crumbling.
