A comforting dish featuring zucchini rolled with a creamy ricotta filling, topped with marinara and mozzarella.

- 2 large zucchinis
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
- Olive oil for brushing (optional)
- Red pepper flakes (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips and sprinkle with salt. Let sit for 10 minutes, then pat dry.
- In a bowl, mix ricotta, 1/2 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper until smooth.
- Spread marinara sauce on the bottom of a baking dish.
- Take a zucchini slice, place a spoonful of the cheese mixture on one end, and roll it up. Place seam-side down in the baking dish. Repeat with remaining zucchini.
- Top with remaining marinara sauce and sprinkle with the rest of the mozzarella.
- Cover with foil and bake for 20 minutes. Then remove the foil and bake for an additional 15 minutes until bubbly and golden.
- Garnish with fresh basil before serving.
Notes
Allow to rest for a few minutes after baking for easier serving. This dish can be made ahead and refrigerated until ready to bake.
