- 2 hard- or medium-boiled eggs
- 1 medium sweet potato, peeled and cubed
- 1 tsp olive oil
- Salt to taste
- Freshly cracked black pepper to taste
- 1 avocado, sliced
- Garlic powder (optional)
- Onion powder (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the cubed sweet potatoes with the olive oil, salt, and pepper.
- Spread the sweet potatoes out on a baking sheet in a single layer.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through.
- While the sweet potatoes are roasting, boil water in a medium saucepan and gently add the eggs to cook for about 8-9 minutes.
- Cool the eggs under cold water to stop the cooking process and peel them.
- Slice the avocado just before serving.
- To assemble, layer the roasted sweet potatoes, sliced eggs, and avocado in a bowl. Sprinkle with extra black pepper.
