- 2 chicken breasts
- 1/2 cup barbecue sauce
- 2 medium sweet potatoes
- 1 avocado, sliced
- 1 cup corn (fresh or canned)
- Salt and pepper to taste
- Olive oil
- Optional toppings: cilantro, green onions, lime wedges
Instructions
- Preheat your oven to 400°F (200°C) and position a rack in the middle.
- Peel and dice the sweet potatoes into 1-inch cubes.
- Toss the sweet potatoes with olive oil, salt, and pepper; spread them in a single layer on a rimmed baking sheet.
- Roast the sweet potatoes for 25 to 30 minutes, turning once halfway through.
- While the potatoes roast, pat the chicken breasts dry and season with salt and pepper.
- Heat a skillet over medium-high heat with olive oil; cook the chicken for about 6 to 7 minutes on each side until golden.
- Brush the chicken with barbecue sauce in the last few minutes of cooking.
- Let the chicken rest for 5 minutes, then slice into strips.
- In bowls, layer the roasted sweet potatoes, sliced chicken, corn, and avocado; finish with optional toppings.
Notes
For extra flavor, consider adding garlic powder or butter to the sweet potatoes.
