- 1 1/4 pounds ground beef
- 1 tablespoon olive oil
- 1 1/4 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1 1/4 cups sliced mushrooms
- 1 1/4 cups beef broth
- 1 1/4 cups milk
- 10 ounces Velveeta cheese, cubed
- 2 1/2 tablespoons sour cream
- 1 1/4 teaspoons Worcestershire sauce
- 1 1/4 teaspoons paprika
- 1/2 teaspoon ground mustard (optional)
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Begin by bringing a large pot of salted water to a boil and cook the penne pasta until it’s perfectly tender, about 9-11 minutes. Drain well and set aside.
- In a heavy-bottomed skillet, heat the olive oil over medium heat. Add the finely chopped onion, minced garlic, and sliced mushrooms, cooking slowly until they’re softened and aromatic, around 4-5 minutes.
- Stir in the ground beef, breaking it up as it cooks. Allow it to brown nicely for about 5-7 minutes. Once browned, drain any excess grease from the pan.
- Pour in the beef broth and milk, then incorporate the Worcestershire sauce, paprika, and ground mustard if you’re using it. Stir the mixture and let it gently bubble for a few minutes.
- Add the cubed Velveeta cheese, and let it melt gradually, stirring occasionally until you achieve a smooth, glossy sauce.
- Lower the heat and stir in the sour cream. Taste and adjust with salt and black pepper as needed.
- Fold the cooked penne into the sauce, ensuring every piece is well coated. Let it sit for a couple of minutes to heat through and thicken slightly.
- Serve in bowls, garnished with a sprinkle of chopped parsley for a fresh touch.
