  • 1 1/4 cups milk
  • 10 ounces Velveeta cheese, cubed
  • 2 1/2 tablespoons sour cream
  • 1 1/4 teaspoons Worcestershire sauce
  • 1 1/4 teaspoons paprika
  • 1/2 teaspoon ground mustard (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Begin by bringing a large pot of salted water to a boil and cook the penne pasta until it’s perfectly tender, about 9-11 minutes. Drain well and set aside.
  2. In a heavy-bottomed skillet, heat the olive oil over medium heat. Add the finely chopped onion, minced garlic, and sliced mushrooms, cooking slowly until they’re softened and aromatic, around 4-5 minutes.
  3. Stir in the ground beef, breaking it up as it cooks. Allow it to brown nicely for about 5-7 minutes. Once browned, drain any excess grease from the pan.
  4. Pour in the beef broth and milk, then incorporate the Worcestershire sauce, paprika, and ground mustard if you’re using it. Stir the mixture and let it gently bubble for a few minutes.
  5. Add the cubed Velveeta cheese, and let it melt gradually, stirring occasionally until you achieve a smooth, glossy sauce.
  6. Lower the heat and stir in the sour cream. Taste and adjust with salt and black pepper as needed.
  7. Fold the cooked penne into the sauce, ensuring every piece is well coated. Let it sit for a couple of minutes to heat through and thicken slightly.
  8. Serve in bowls, garnished with a sprinkle of chopped parsley for a fresh touch.
