- 12 ounces bowtie pasta (farfalle)
- 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon Cajun seasoning (plus more to taste)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 5 cloves garlic, minced
- 1 cup chicken broth
- 1 1/2 cups heavy cream
- 4 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded white cheddar cheese
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
Instructions
- Fill a large pot with water, season it generously with salt, and bring it to a rolling boil. Drop in the bowtie pasta and cook until just tender, about 10-12 minutes.
- Drain the pasta well, drizzle with olive oil, and set aside.
- Warm the olive oil and butter in a wide pan over medium-high heat. Once the butter melts and starts to sizzle, add the chicken pieces.
- Sprinkle over the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook the chicken until golden and fully cooked, about 5-7 minutes.
- Transfer the chicken to a plate, reduce heat, and add the minced garlic to the pan. Cook for about 30 seconds.
- Pour in the chicken broth and scrape up flavorful bits from the pan.
- Add the heavy cream and cream cheese, stirring until smooth.
- Mix in the Parmesan, mozzarella, and white cheddar until thick and glossy.
- Combine the Italian seasoning, dried basil, and half of the parsley with the chicken. Return the chicken to the pan and fold into the sauce.
- Toss in the drained pasta, mixing everything together, and let it sit over low heat for a couple of minutes.
- Taste and adjust with additional seasoning if needed, then finish with remaining parsley and a sprinkle of Parmesan before serving.
