Ingredients

  • 12 ounces bowtie pasta (farfalle)
  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon Cajun seasoning (plus more to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded white cheddar cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil

Instructions

  1. Fill a large pot with water, season it generously with salt, and bring it to a rolling boil. Drop in the bowtie pasta and cook until just tender, about 10-12 minutes.
  2. Drain the pasta well, drizzle with olive oil, and set aside.
  3. Warm the olive oil and butter in a wide pan over medium-high heat. Once the butter melts and starts to sizzle, add the chicken pieces.
  4. Sprinkle over the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook the chicken until golden and fully cooked, about 5-7 minutes.
  5. Transfer the chicken to a plate, reduce heat, and add the minced garlic to the pan. Cook for about 30 seconds.
  6. Pour in the chicken broth and scrape up flavorful bits from the pan.
  7. Add the heavy cream and cream cheese, stirring until smooth.
  8. Mix in the Parmesan, mozzarella, and white cheddar until thick and glossy.
  9. Combine the Italian seasoning, dried basil, and half of the parsley with the chicken. Return the chicken to the pan and fold into the sauce.
  10. Toss in the drained pasta, mixing everything together, and let it sit over low heat for a couple of minutes.
  11. Taste and adjust with additional seasoning if needed, then finish with remaining parsley and a sprinkle of Parmesan before serving.
