Ingredients

- 500 grams Chicken
- 2 large Onions (sliced)
- 2 tsp Ginger garlic paste
- 2 tsp Red chili powder
- ¼ tsp Turmeric powder
- ½ tsp Coriander powder
- Black pepper to taste
- ¼ tsp Garam masala powder
- 2 tbsp Coconut oil
- A handful of fresh curry leaves
- Coconut oil for frying onions
- Salt to taste
Instructions
- Heat coconut oil in a frying pan over medium heat.
- Add sliced onions and fry until golden brown.
- Remove the fried onions and drain on paper towels.
- In a mixing bowl, marinate chicken with ginger garlic paste, red chili powder, turmeric powder, coriander powder, and salt.
- Mix in half of the fried onions with the marinated chicken.
- Cook the marinated chicken in the same pan over medium heat until fully cooked and gravy thickens.
- Stir in garam masala and fresh curry leaves.
- Serve garnished with the remaining fried onions.
Notes
Marinate the chicken for a few hours for deeper flavors. Fried onions can be made in advance for added crunch.
