Description

A flavorful and comforting chicken dish infused with aromatic spices, perfect for gatherings or weekday dinners.


Ingredients

Scale
  • 500 grams Chicken
  • 2 large Onions (sliced)
  • 2 tsp Ginger garlic paste
  • 2 tsp Red chili powder
  • ¼ tsp Turmeric powder
  • ½ tsp Coriander powder
  • Black pepper to taste
  • ¼ tsp Garam masala powder
  • 2 tbsp Coconut oil
  • A handful of fresh curry leaves
  • Coconut oil for frying onions
  • Salt to taste

Instructions

  1. Heat coconut oil in a frying pan over medium heat.
  2. Add sliced onions and fry until golden brown.
  3. Remove the fried onions and drain on paper towels.
  4. In a mixing bowl, marinate chicken with ginger garlic paste, red chili powder, turmeric powder, coriander powder, and salt.
  5. Mix in half of the fried onions with the marinated chicken.
  6. Cook the marinated chicken in the same pan over medium heat until fully cooked and gravy thickens.
  7. Stir in garam masala and fresh curry leaves.
  8. Serve garnished with the remaining fried onions.

Notes

Marinate the chicken for a few hours for deeper flavors. Fried onions can be made in advance for added crunch.
