Description

A comforting casserole featuring creamy chicken and vegetables topped with cheesy, garlic-butter biscuits.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced (about 1 cup)
  • 2 garlic cloves, minced
  • 2 cans condensed cream of chicken soup (10.5 ounces each)
  • 1 cup low-sodium chicken broth
  • 1/4 cup heavy cream or whole milk
  • 2 tablespoons sour cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 rotisserie chicken, skin and bones removed and meat shredded (about 4 cups)
  • 1 bag frozen mixed vegetables (16 ounces)
  • 1 box Red Lobster Cheddar Bay Biscuit Mix (11.36 ounces, including the enclosed garlic-herb seasoning packet)
  • 3/4 cup cold water
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F. Lightly grease a deep 9-by-13-inch baking dish with 1 tablespoon of the unsalted butter.
  2. Melt the remaining 1 tablespoon butter in a skillet over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened but not browned. Add the minced garlic and cook for 30 seconds.
  3. Transfer the onion and garlic to a large mixing bowl. Add the condensed cream of chicken soup, chicken broth, heavy cream or whole milk, sour cream, dried thyme, kosher salt, and black pepper. Whisk until evenly blended.
  4. Fold the shredded rotisserie chicken and frozen mixed vegetables into the sauce. Spread the mixture evenly in the prepared baking dish.
  5. Bake the uncovered filling for 10 minutes to heat the cold vegetables.
  6. Place the biscuit mix in a medium bowl and stir in the cold water and shredded sharp cheddar until no dry pockets remain. Do not overmix.
  7. Drop 12 spoonfuls of biscuit dough over the filling, leaving space for steam to escape.
  8. Return the dish to the oven and bake for 22 to 25 minutes until the filling bubbles and the biscuits are golden.
  9. Stir the garlic-herb seasoning packet into the melted butter and brush it over the hot biscuits.
  10. Let the pot pie stand for 5 minutes before serving.

Notes

For a broccoli-cheddar version, replace half of the mixed vegetables with small frozen broccoli florets. A turkey variation works beautifully by substituting shredded turkey for the rotisserie chicken.
