- 1 whole chicken (about 4–5 lbs)
- 1 cup cranberry juice
- 1/2 cup maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh thyme or rosemary for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the cranberry juice, maple syrup, Dijon mustard, soy sauce, salt, and pepper in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, and let it reduce slightly for about 10 minutes.
- Place the whole chicken in a roasting pan. Brush the glaze generously over the chicken.
- Roast in the preheated oven for about 1.5 hours, basting the chicken with the glaze every 30 minutes.
- Check that the internal temperature reaches 165°F (75°C) and the juices run clear when pierced.
- Let the chicken rest for 10-15 minutes before carving.
- Garnish with fresh thyme or rosemary if desired.
Notes
For additional flavor, marinate the chicken in the glaze overnight before roasting.
