Description
A deliciously satisfying dinner of sirloin steak paired with silky fettuccine in a rich, homemade Parmesan Alfredo sauce, infused with Cajun spices.
Ingredients
Scale
- 1 lb sirloin steak
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 3 cups fettuccine pasta
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the sirloin dry with paper towels, then rub the Cajun seasoning over every surface. Let it stand at room temperature for 10 minutes while you heat the pasta water.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers. Add the steak and cook for 4 to 5 minutes per side, avoiding unnecessary movement to develop a browned crust.
- Check the thickest section with an instant-read thermometer and remove the steak at your preferred doneness. Transfer it to a cutting board, loosely cover it, and rest for at least 5 minutes.
- Meanwhile, cook the fettuccine according to package instructions until al dente. Before draining, reserve ½ cup pasta water, then drain the noodles and set them aside.
- Lower the skillet to medium heat, leaving the browned seasoning and beef drippings inside. Melt the butter, add the minced garlic, and cook for 1 minute until fragrant but not brown.
- Pour in the heavy cream and stir while gently scraping the flavorful browned bits from the skillet. Bring the cream to a low simmer for 2 minutes, but do not allow it to reach a rolling boil.
- Reduce the heat to low and gradually stir in the grated Parmesan. Cook for 2 to 3 minutes until the cheese melts and the sauce lightly coats the back of a spoon.
- Season the sauce with salt and pepper after tasting it. Add the cooked fettuccine and toss until every ribbon looks glossy, loosening the sauce with reserved pasta water if needed.
- Slice the rested steak thinly across the grain for a tender bite. Arrange the slices over the creamy pasta, spoon any resting juices on top, and garnish with chopped parsley.
Notes
Use fresh garlic and grate your Parmesan cheese for best results.
