- 12 oz fettuccine pasta
- 1.5 lbs boneless skinless chicken breasts, sliced thick
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Salt and black pepper, to taste
- 1.5 cups heavy cream
- 1/2 cup chicken broth
- 6 oz Velveeta cheese, cubed
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Sliced green onions for garnish
- Red pepper flakes for garnish
Instructions
- Cook the fettuccine pasta in a large pot of salted boiling water until tender, following the package instructions. Drain and set aside.
- Season the sliced chicken with Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper in a large bowl.
- Heat the olive oil and 1 tablespoon of butter in a heavy bottomed skillet over medium-high heat. Once hot, sear the chicken for 5–6 minutes on each side until deeply golden and cooked throughout. Remove from the skillet and let it rest, then slice it into pieces.
- Melt the remaining butter in the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, simmering it gently while whisking to blend.
- Add the cubed Velveeta and softened cream cheese, stirring until both are melted and the sauce is smooth.
- Incorporate the grated Parmesan and shredded mozzarella, stirring until the sauce reaches a thick, glossy consistency.
- Throw in the fettuccine into the sauce, tossing until every ribbon is thoroughly coated.
- Arrange the sliced Cajun chicken on top, allowing the sauce to envelop the dish.
- Garnish with sliced green onions and a sprinkle of red pepper flakes. Serve hot and enjoy!
Notes
Feel free to swap whole wheat fettuccine or switch chicken for shrimp. You can also use coconut milk for a vegan sauce.
