  • 12 ounces spaghetti
  • 1 1/2 pounds boneless skinless chicken breasts, cut into pieces
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil, and cook the spaghetti until just tender, following package instructions. Once done, drain the spaghetti and set it aside.
  2. Season the chicken pieces with Cajun seasoning, garlic powder, salt, and pepper, mixing everything so it’s evenly coated.
  3. In a large skillet over medium-high heat, heat olive oil with 1 tablespoon of butter. Add the seasoned chicken to the skillet and cook until nicely browned and cooked through. Transfer the chicken to a plate.
  4. Reduce the heat to medium and add the remaining butter to the skillet. Once melted, add the diced onion and sauté until soft and slightly golden. Stir in the minced garlic and cook for another minute until fragrant.
  5. Sprinkle the flour over the onion mixture, stirring well and letting it cook for about a minute to eliminate the raw flour taste.
  6. Slowly pour in the chicken broth and heavy cream, whisking continuously until the sauce becomes smooth and starts to thicken.
  7. Add the cream cheese, provolone, mozzarella, and Parmesan to the skillet, stirring gently until everything melts into a rich, thick sauce.
  8. Return the chicken to the pan, and then add the cooked spaghetti. Toss everything together well so the sauce coats each strand of pasta.
  9. Let the pasta cook in the sauce for a couple of minutes until everything is hot and the sauce clings nicely to the spaghetti.
  10. Finish with a sprinkle of chopped parsley before serving warm.

Notes

For a healthier option, consider using whole wheat spaghetti. Customize with different proteins or vegetables as desired.
