- 12 oz spaghetti
- 1 lb boneless, skinless chicken breasts, cut into thick strips
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 oz Velveeta cheese, cubed
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 oz cream cheese, cubed
- 1/2 tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil, then add the spaghetti. Cook until tender but still slightly firm in the center. Drain and set aside.
- In a large skillet, warm the olive oil with 1 tablespoon of butter over medium-high heat. Add the chicken strips, seasoning with Cajun seasoning, paprika, salt, and pepper. Cook undisturbed for about 3-4 minutes until golden, then flip and cook until fully done. Transfer the chicken to a plate.
- Lower the heat to medium and add the remaining butter to the same skillet. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth followed by heavy cream, stirring to combine. Allow the mixture to bubble lightly until it starts to thicken.
- Add the Velveeta, mozzarella, Parmesan, and cream cheese, stirring patiently until everything melts into a silky-smooth sauce.
- Sprinkle in the Italian seasoning, taste, and adjust salt and pepper if necessary.
- Return the cooked spaghetti to the pan, tossing it in the sauce until every strand is coated. Add the chicken back to the skillet and combine everything until heated through.
- Serve immediately, garnished with fresh parsley and an extra dusting of Parmesan for that finishing touch.
Notes
Let the chicken rest at room temperature before cooking for even cooking. Store leftovers in an airtight container for 3-4 days.
