- 12 ounces fettuccine pasta
- 1 1/2 pounds boneless skinless chicken breasts, cut into pieces
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 1/2 cups heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Chopped parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until tender but with a slight bite. Drain and set aside.
- Season chicken pieces with Cajun seasoning, garlic powder, salt, and pepper, ensuring even coating.
- Heat olive oil with 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken and cook until browned and fully cooked. Transfer to a plate.
- Reduce the skillet heat to medium. Add remaining butter and diced onion, cooking until soft and lightly golden.
- Stir in minced garlic, cooking until fragrant, about 30 seconds.
- Sprinkle flour over the mixture, stirring for about a minute to cook off the raw flavor.
- Gradually pour in chicken broth and heavy cream, whisking continuously until the mixture is smooth and slightly thickened.
- Add cream cheese, provolone, mozzarella, and Parmesan, stirring until everything melts into a creamy sauce.
- Return the cooked chicken to the pan and add fettuccine, tossing until fully coated, about 2 minutes.
- Let simmer for a couple of minutes so the sauce thickens and clings to the pasta. Garnish with chopped parsley and serve hot.
Notes
For a twist, substitute chicken with shrimp or use whole wheat pasta for a healthier option.
