  • 1 1/2 pounds boneless skinless chicken breasts, cut into pieces
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until tender but with a slight bite. Drain and set aside.
  2. Season chicken pieces with Cajun seasoning, garlic powder, salt, and pepper, ensuring even coating.
  3. Heat olive oil with 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken and cook until browned and fully cooked. Transfer to a plate.
  4. Reduce the skillet heat to medium. Add remaining butter and diced onion, cooking until soft and lightly golden.
  5. Stir in minced garlic, cooking until fragrant, about 30 seconds.
  6. Sprinkle flour over the mixture, stirring for about a minute to cook off the raw flavor.
  7. Gradually pour in chicken broth and heavy cream, whisking continuously until the mixture is smooth and slightly thickened.
  8. Add cream cheese, provolone, mozzarella, and Parmesan, stirring until everything melts into a creamy sauce.
  9. Return the cooked chicken to the pan and add fettuccine, tossing until fully coated, about 2 minutes.
  10. Let simmer for a couple of minutes so the sauce thickens and clings to the pasta. Garnish with chopped parsley and serve hot.

Notes

For a twist, substitute chicken with shrimp or use whole wheat pasta for a healthier option.
