Ingredients

  • 12 oz spaghetti
  • 1 lb boneless, skinless chicken breasts, sliced into thick pieces
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese
  • 1/2 tsp Italian seasoning
  • Chopped parsley, for garnish

Instructions

  1. Fill a large pot with salted water and bring to a boil. Add the spaghetti and cook until tender, about 8-10 minutes. Drain and set aside.
  2. Season the chicken pieces with Cajun seasoning, smoked paprika, salt, and pepper.
  3. Heat olive oil and 2 tablespoons of butter in a wide skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  4. Reduce the heat and add the remaining butter. Stir in the minced garlic and cook for about 1 minute until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring to lift browned bits from the bottom of the pan.
  6. Add the Velveeta, mozzarella, Parmesan, and cream cheese, stirring until the cheeses melt into a smooth sauce.
  7. Sprinkle in Italian seasoning and an extra pinch of Cajun spice.
  8. Add the cooked spaghetti and toss until every strand is coated with the sauce.
  9. Return the chicken to the skillet and warm everything together for a minute.
  10. Serve immediately, garnished with chopped parsley and extra Parmesan.

Notes

For a lighter option, you can substitute heavy cream with Greek yogurt. This dish is highly adaptable; feel free to customize it to your taste.
