- 12 oz spaghetti
- 1 lb boneless, skinless chicken breasts, sliced into thick pieces
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 4 cloves garlic, minced
- 1 1/2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 oz Velveeta cheese, cubed
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 oz cream cheese
- 1/2 tsp Italian seasoning
- Chopped parsley, for garnish
Instructions
- Fill a large pot with salted water and bring to a boil. Add the spaghetti and cook until tender, about 8-10 minutes. Drain and set aside.
- Season the chicken pieces with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil and 2 tablespoons of butter in a wide skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- Reduce the heat and add the remaining butter. Stir in the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to lift browned bits from the bottom of the pan.
- Add the Velveeta, mozzarella, Parmesan, and cream cheese, stirring until the cheeses melt into a smooth sauce.
- Sprinkle in Italian seasoning and an extra pinch of Cajun spice.
- Add the cooked spaghetti and toss until every strand is coated with the sauce.
- Return the chicken to the skillet and warm everything together for a minute.
- Serve immediately, garnished with chopped parsley and extra Parmesan.
Notes
For a lighter option, you can substitute heavy cream with Greek yogurt. This dish is highly adaptable; feel free to customize it to your taste.
