Description

A comforting and flavorful pasta dish featuring tender steak strips, fettuccine, and a creamy Cajun Parmesan sauce, ready in about 40 minutes.

Ingredients

Scale
  • 1 lb ribeye or sirloin steak, sliced against the grain into 1/2-inch strips
  • 1 tbsp Cajun seasoning, divided
  • 3/4 tsp kosher salt, divided
  • 1/2 tsp ground black pepper, divided
  • 1 tbsp olive oil
  • 12 oz dry fettuccine pasta
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup reserved pasta cooking water
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the steak. Pat the steak strips dry with paper towels. Sprinkle them evenly with 2 teaspoons Cajun seasoning, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper.
  2. Boil the pasta. Bring a large pot of water to a boil. Add 1/4 teaspoon kosher salt and the fettuccine. Cook according to the package directions until al dente, usually 10 to 12 minutes. Reserve 1/2 cup pasta water before draining.
  3. Sear the steak. Heat olive oil in a 12-inch skillet over medium-high heat. Cook the steak for 2 to 3 minutes on the first side and 1 to 2 minutes on the second, until browned. Transfer to a plate.
  4. Cook the aromatics. Reduce heat to medium. Add diced onion and cook for 3 to 4 minutes until softened. Add garlic and cook for an additional 30 seconds.
  5. Start the Alfredo sauce. Add butter, allow it to melt, then stir in heavy cream, remaining Cajun seasoning, kosher salt, and black pepper. Simmer gently for 3 to 4 minutes.
  6. Add the cheese. Gradually add Parmesan, stirring until melted. Stir in reserved pasta water to achieve a smooth sauce.
  7. Combine the pasta and steak. Add drained fettuccine and toss to coat. Return the steak and juices to the skillet and toss gently over low heat for 1 to 2 minutes.
  8. Finish and serve. Remove from heat, sprinkle with parsley, and serve immediately.
