  • 12 oz linguine pasta
  • 1 lb boneless, skinless chicken breasts, sliced into thick strips
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Begin by cooking the linguine in a large pot of salted boiling water until just tender, around 8-10 minutes. Drain well and set aside.
  2. While the pasta cooks, season the sliced chicken with salt, black pepper, Italian seasoning, dried basil, and oregano.
  3. Heat olive oil along with half of the butter in a large skillet over medium-high heat. Add the seasoned chicken and cook until deeply golden, about 5-6 minutes per side. Remove the chicken and set aside.
  4. In the same skillet, add the remaining butter and let it melt before stirring in the minced garlic. Sauté for about 1 minute until fragrant.
  5. Next, pour in the chicken broth and heavy cream, stirring to combine. Let it warm until the mixture begins to thicken, roughly 2-3 minutes.
  6. Lower the heat and incorporate the Velveeta, mozzarella, Parmesan, and cream cheese into the sauce, stirring until smooth.
  7. Add the drained linguine into the skillet, tossing gently until all strands are coated.
  8. Return the cooked chicken to the skillet, arranging it over the pasta or folding it in.
  9. Finish by garnishing with chopped parsley or basil and a light dusting of Parmesan before serving.

Notes

Serve with garlic bread and a mixed green salad for a complete meal.
