- 12 oz linguine pasta
- 1 lb boneless, skinless chicken breasts, sliced into thick strips
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp dried basil
- 1/2 tsp oregano
- Salt and black pepper, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 oz Velveeta cheese, cubed
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 oz cream cheese
- Fresh parsley or basil, chopped, for garnish
Instructions
- Begin by cooking the linguine in a large pot of salted boiling water until just tender, around 8-10 minutes. Drain well and set aside.
- While the pasta cooks, season the sliced chicken with salt, black pepper, Italian seasoning, dried basil, and oregano.
- Heat olive oil along with half of the butter in a large skillet over medium-high heat. Add the seasoned chicken and cook until deeply golden, about 5-6 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the remaining butter and let it melt before stirring in the minced garlic. Sauté for about 1 minute until fragrant.
- Next, pour in the chicken broth and heavy cream, stirring to combine. Let it warm until the mixture begins to thicken, roughly 2-3 minutes.
- Lower the heat and incorporate the Velveeta, mozzarella, Parmesan, and cream cheese into the sauce, stirring until smooth.
- Add the drained linguine into the skillet, tossing gently until all strands are coated.
- Return the cooked chicken to the skillet, arranging it over the pasta or folding it in.
- Finish by garnishing with chopped parsley or basil and a light dusting of Parmesan before serving.
Notes
Serve with garlic bread and a mixed green salad for a complete meal.
