  • 1 1/2 lbs ground beef
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 1/2 cups heavy cream
  • 1/2 cup beef broth
  • 6 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the rotini pasta in a large pot of salted water until al dente. Drain it and set it aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it into crumbles. Cook until browned, then season with garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Transfer the beef to a plate and set aside.
  3. Melt 2 tablespoons of butter in the same skillet. Add the diced onion and cook until softened, then add the minced garlic and stir for about 30 seconds until fragrant.
  4. Pour in the heavy cream and beef broth, bringing the mixture to a gentle simmer while stirring occasionally.
  5. Add the Velveeta and cream cheese, stirring continuously until both are melted and smooth.
  6. Incorporate the shredded cheddar and Parmesan cheese, stirring until melted and the sauce is thick.
  7. Return the cooked ground beef to the skillet and mix well to coat with the cheese sauce.
  8. Add the cooked rotini, tossing until well coated with the creamy sauce.
  9. Garnish with fresh parsley and serve immediately.

Notes

For a lighter option, swap ground beef for turkey or chicken. You can also add vegetables like sautéed bell peppers or spinach.
