- 12 oz rotini pasta
- 1 1/2 lbs ground beef
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1 1/2 cups heavy cream
- 1/2 cup beef broth
- 6 oz Velveeta cheese, cubed
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Cook the rotini pasta in a large pot of salted water until al dente. Drain it and set it aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it into crumbles. Cook until browned, then season with garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Transfer the beef to a plate and set aside.
- Melt 2 tablespoons of butter in the same skillet. Add the diced onion and cook until softened, then add the minced garlic and stir for about 30 seconds until fragrant.
- Pour in the heavy cream and beef broth, bringing the mixture to a gentle simmer while stirring occasionally.
- Add the Velveeta and cream cheese, stirring continuously until both are melted and smooth.
- Incorporate the shredded cheddar and Parmesan cheese, stirring until melted and the sauce is thick.
- Return the cooked ground beef to the skillet and mix well to coat with the cheese sauce.
- Add the cooked rotini, tossing until well coated with the creamy sauce.
- Garnish with fresh parsley and serve immediately.
Notes
For a lighter option, swap ground beef for turkey or chicken. You can also add vegetables like sautéed bell peppers or spinach.
