  • 18 oz spaghetti
  • 1.5 lbs lean ground beef
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 1.5 small onions, finely diced
  • 4.5 cloves garlic, minced
  • 1.5 tsp oregano
  • 1.5 tsp garlic powder
  • Salt and black pepper, to taste
  • 3 tbsp all-purpose flour
  • 1.5 cups broth (chicken or beef)
  • 3 cups heavy cream
  • 1.5 cups shredded Cheddar cheese
  • 1.5 cups grated Parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • Additional butter, for finishing
  • Chopped fresh parsley or herbs, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until tender with a slight bite. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart as it browns. Season lightly with salt and black pepper. Transfer the beef to a plate.
  3. Reduce the heat to medium and add the butter to the pan. Stir in the diced onions and cook until softened and lightly golden.
  4. Add the minced garlic, oregano, and garlic powder, stirring for about 30 seconds until fragrant.
  5. Sprinkle the flour over the mixture and stir continuously to blend smoothly and cook for about a minute.
  6. Slowly pour in the broth while stirring, then add the heavy cream and let simmer until thickened.
  7. Add the Cheddar, Parmesan, and mozzarella in batches, stirring after each addition until melted and the sauce is thick and glossy.
  8. Return the cooked beef to the skillet and stir until fully coated in the sauce.
  9. Add the cooked spaghetti and toss until every strand is coated in the sauce.
  10. Remove from heat and stir in a small piece of butter for extra richness. Finish with chopped parsley or herbs and serve hot.

Notes

Make sure to taste the dish while cooking to adjust seasonings. Overcooked pasta can ruin the dish; ensure it’s al dente.
