- 12 oz linguine pasta
- 1 lb boneless skinless chicken breasts, cut into bite-size pieces
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp Italian seasoning
- Salt and black pepper, to taste
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup whole milk
- 4 oz Velveeta cheese, cubed
- 1/2 cup sharp cheddar cheese, shredded
- 3/4 cup freshly grated Parmesan cheese
- 2 oz cream cheese, softened
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp grated Parmesan (for topping)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook until just tender, about 9-11 minutes. Drain the pasta and set it aside.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the bite-size chicken pieces, seasoning them with garlic powder, onion powder, smoked paprika, Italian seasoning, along with salt and black pepper. Cook until the chicken is golden with lightly crisp edges, about 6-8 minutes. Transfer the cooked chicken to a plate.
- In the same skillet, reduce the heat to medium and melt the remaining butter. Add minced garlic, cooking briefly until fragrant, for about 30 seconds.
- Pour in the chicken broth, whole milk, and heavy cream, stirring gently to combine until the mixture is smooth.
- Add the cubed Velveeta and cream cheese, stirring continuously until melted and fully blended into the sauce.
- Mix in the shredded cheddar and grated Parmesan cheese, continuing to stir until the sauce thickens and becomes creamy.
- Return the cooked chicken to the skillet, stirring to coat it in the sauce.
- Toss in the cooked linguine, mixing until everything is evenly coated and glossy. Let it sit over low heat for a couple of minutes to allow the sauce to settle.
- Finish with chopped fresh parsley and a sprinkle of grated Parmesan before serving.
Notes
Cook the chicken in batches if your skillet is small to avoid steaming. Use fresh ingredients for the best flavor.
