Ingredients

  • 12 ounces rotini pasta
  • 1 1/2 pounds chicken, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded Colby Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini until tender, about 9-11 minutes. Drain and set aside.
  2. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken pieces and season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until golden and fully cooked, about 7-10 minutes. Transfer chicken to a plate.
  3. Lower the heat to medium and add the minced garlic to the skillet. Cook until fragrant, about 30 seconds.
  4. Pour in the chicken broth, stirring gently and scraping the bits from the pan.
  5. Add the heavy cream and cream cheese, whisking until smooth.
  6. Stir in the Colby Jack, Parmesan, and mozzarella cheeses until the sauce thickens.
  7. Sprinkle in the Italian seasoning and half of the chopped parsley, stirring to combine.
  8. Return the chicken to the sauce and stir to coat thoroughly.
  9. Add the cooked rotini to the skillet and toss until coated. Let sit over low heat for a couple of minutes.
  10. Finish with remaining parsley and serve warm.

Notes

Feel free to adapt the recipe by swapping the rotini for gluten-free pasta or adding vegetables for extra nutrition.
