  • 12 oz rotini pasta
  • 1 lb boneless, skinless chicken breasts, cut into thick strips
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 4 oz Velveeta cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1/2 tsp onion powder
  • 1 tsp lemon juice
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini until just tender. Drain and set aside.
  2. Season the chicken strips with Cajun seasoning, Italian seasoning, salt, and pepper.
  3. Heat the olive oil with 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden, around 5-7 minutes. Transfer to a plate.
  4. Reduce the heat to medium, melt the remaining butter in the skillet. Add the minced garlic and cook briefly until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring gently.
  6. Add the Velveeta cheese and stir until melted. Mix in the grated Parmesan, mozzarella, and cream cheese, stirring until the sauce is smooth.
  7. Stir in the onion powder and lemon juice.
  8. Toss the cooked rotini into the sauce until every piece is coated.
  9. Return the cooked chicken to the skillet and combine everything, warming for about a minute.
  10. Serve hot, garnished with fresh parsley.
