- 12 oz rotini pasta
- 1 lb boneless, skinless chicken breasts, cut into thick strips
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 oz Velveeta cheese, cubed
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 oz cream cheese
- 1/2 tsp onion powder
- 1 tsp lemon juice
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the rotini until just tender. Drain and set aside.
- Season the chicken strips with Cajun seasoning, Italian seasoning, salt, and pepper.
- Heat the olive oil with 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden, around 5-7 minutes. Transfer to a plate.
- Reduce the heat to medium, melt the remaining butter in the skillet. Add the minced garlic and cook briefly until fragrant.
- Pour in the chicken broth and heavy cream, stirring gently.
- Add the Velveeta cheese and stir until melted. Mix in the grated Parmesan, mozzarella, and cream cheese, stirring until the sauce is smooth.
- Stir in the onion powder and lemon juice.
- Toss the cooked rotini into the sauce until every piece is coated.
- Return the cooked chicken to the skillet and combine everything, warming for about a minute.
- Serve hot, garnished with fresh parsley.

Add vegetables like broccoli or spinach for added nutrition. You can also swap out chicken for shrimp or tofu for different protein options.
