Ingredients

  • 12 oz penne pasta
  • 1 1/2 lbs boneless skinless chicken breasts, sliced thick
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 4 oz cream cheese, softened
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup shredded sharp cheddar cheese
  • 3/4 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta in a large pot of salted water according to the package instructions until al dente. Drain and set aside.
  2. Season the sliced chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and black pepper.
  3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and sear for 5–6 minutes on each side until golden brown. Transfer the chicken to a plate and set aside.
  4. Melt the remaining tablespoon of butter in the same skillet. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
  6. Once simmering, add the cream cheese and stir until smooth. Gradually mix in the Parmesan, cheddar, and mozzarella cheeses until the sauce is thick and glossy.
  7. Add the cooked penne pasta to the sauce and toss until every piece is coated.
  8. Slice the seared chicken and arrange it on top of the creamy penne.
  9. Garnish with freshly chopped parsley and serve hot.

Notes

For added nutrition, consider tossing in vegetables like spinach or broccoli. You can also substitute chicken with shrimp for a seafood variation.
