- 12 oz penne pasta
- 1 1/2 lbs boneless skinless chicken breasts, sliced thick
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 5 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 4 oz cream cheese, softened
- 3/4 cup grated Parmesan cheese
- 3/4 cup shredded sharp cheddar cheese
- 3/4 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Cook the penne pasta in a large pot of salted water according to the package instructions until al dente. Drain and set aside.
- Season the sliced chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and black pepper.
- Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and sear for 5–6 minutes on each side until golden brown. Transfer the chicken to a plate and set aside.
- Melt the remaining tablespoon of butter in the same skillet. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Once simmering, add the cream cheese and stir until smooth. Gradually mix in the Parmesan, cheddar, and mozzarella cheeses until the sauce is thick and glossy.
- Add the cooked penne pasta to the sauce and toss until every piece is coated.
- Slice the seared chicken and arrange it on top of the creamy penne.
- Garnish with freshly chopped parsley and serve hot.
Notes
For added nutrition, consider tossing in vegetables like spinach or broccoli. You can also substitute chicken with shrimp for a seafood variation.
