Ingredients

  • 10 oz rigatoni pasta
  • 1 1/2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 1/2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2/3 tsp Italian seasoning
  • 1/3 tsp garlic powder
  • A small pinch of salt and black pepper (to taste)
  • 2 cups heavy cream
  • 2/3 cup chicken broth
  • 3 oz cream cheese, softened
  • 2/3 cup grated Parmesan cheese
  • 2/3 cup shredded mozzarella cheese
  • 23 tbsp grated Parmesan (for topping)

Instructions

  1. Bring a pot of salted water to a boil over high heat. Cook the rigatoni for about 8-10 minutes, until just tender. Save about a cup of the pasta water, then drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown (about 5-7 minutes). Remove chicken and set aside.
  3. Reduce the heat to medium, add the butter to the skillet. Once melted, stir in the minced garlic and cook until fragrant (about 1 minute).
  4. Sprinkle in the Italian seasoning and garlic powder. Pour in the heavy cream and chicken broth, warming gently until it starts to bubble.
  5. Add the softened cream cheese, stirring until melted into the sauce. Gradually mix in the Parmesan and mozzarella, letting each addition melt before adding more.
  6. Toss in the cooked rigatoni, ensuring each piece is coated. Return the cooked chicken, gently mixing everything together.
  7. Serve hot, garnished with grated Parmesan on top.
