Description

A comforting and substantial one-skillet dinner featuring tender steak, rigatoni pasta, and a rich garlic Parmesan cream sauce, ready in 40 minutes.

Ingredients

Scale
  • 8 oz dry rigatoni pasta
  • 1 tbsp fine sea salt, for the pasta water
  • 1 lb boneless sirloin or ribeye steak, cut against the grain into 1/4-inch strips
  • 1 tsp kosher salt, divided
  • 1/2 tsp ground black pepper, divided
  • 2 tbsp olive oil, divided
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup reserved pasta water, divided
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp red pepper flakes, optional

Instructions

  1. Prepare the water and steak: Bring a large pot of water to a boil, and season steak with salt and pepper.
  2. Cook the rigatoni: Stir fine sea salt into boiling water, add rigatoni, and cook until al dente, about 10-12 minutes. Reserve 1/2 cup pasta water before draining.
  3. Sear the steak in batches: Heat skillet over medium-high heat, add olive oil, and sear steak until browned, then transfer to a plate.
  4. Cook the garlic: Reduce heat to medium, melt butter, add garlic, and cook until fragrant.
  5. Build the sauce: Pour in beef broth, scrape skillet to deglaze, simmer, then stir in cream, Italian seasoning, salt, and pepper.
  6. Add the Parmesan: Gradually whisk in Parmesan and cook until smooth.
  7. Combine the pasta and steak: Add rigatoni and pasta water to the sauce, toss to coat, then return steak to skillet and heat through.
  8. Finish and serve: Remove from heat, fold in parsley, and serve garnished with additional parsley and red pepper flakes if desired.

Notes

For a lighter variation, use chicken instead of steak. The recipe can be made ahead in stages with components stored separately for best texture.
