Ingredients

  • 12 ounces linguine pasta
  • 1 1/2 pounds chicken bites (boneless skinless chicken breasts cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine until tender with a slight bite. Drain and set aside.
  2. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken pieces, season with ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook until lightly golden and fully cooked through, then transfer to a plate.
  3. Lower the heat to medium and add the minced garlic to the skillet. Cook briefly until fragrant, about 30 seconds.
  4. Pour in the chicken broth, stirring gently to lift the flavorful bits from the pan.
  5. Add the heavy cream and cream cheese. Whisk until the mixture becomes smooth and creamy.
  6. Stir in the cheddar, Parmesan, and mozzarella, mixing until the sauce thickens into a rich texture.
  7. Sprinkle in the Italian seasoning and half of the parsley for fresh flavor.
  8. Add the cooked chicken back into the sauce, stirring to coat evenly.
  9. Gently toss the cooked linguine in the sauce until every strand is well coated. Let it sit over low heat for a couple of minutes so the sauce settles.
  10. Finish with the remaining parsley and serve warm.

Notes

For added flavor, consider incorporating fresh spinach or renaming the pasta. This dish can be made ahead of time and tastes great reheated.
