Description

This one-pot creamy Parmesan Italian sausage soup combines savory sausage, tomatoes, and tender pasta in a rich broth, making it a comforting family dinner.

Ingredients

Scale
  • 2 tbsp olive oil
  • 1 lb mild Italian sausage, casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 4 cups low-sodium chicken broth
  • 1 can (14 oz) diced tomatoes with their juices
  • 1 1/2 cups dry short pasta (e.g., ditalini, small shells, or elbow macaroni)
  • 1 cup heavy cream
  • 1/2 cup finely grated Parmesan cheese, plus 2 tbsp for garnish
  • 2 tbsp chopped fresh parsley

Instructions

  1. Prepare the ingredients by dicing the onion, mincing the garlic, grating the Parmesan, and chopping the parsley.
  2. Heat the olive oil in a 5-quart pot over medium heat. Add the Italian sausage and cook for 5-6 minutes, breaking it into small crumbles.
  3. Transfer the browned sausage to a plate with a slotted spoon.
  4. Add the diced onion to the pot and cook for 3-4 minutes until softened. Stir in the garlic and cook for another 30-60 seconds.
  5. Stir in the Italian seasoning, red pepper flakes, kosher salt, and black pepper for about 20 seconds.
  6. Pour in the chicken broth and diced tomatoes. Scrape the bottom of the pot to release browned sausage bits.
  7. Bring the mixture to a gentle boil. Stir in the dry short pasta and reduce heat to simmer, cooking uncovered for 8-10 minutes.
  8. Reduce the heat to low, return the sausage to the pot, and stir in the heavy cream, heating gently for 2 minutes.
  9. Sprinkle in the Parmesan gradually while stirring, and continue cooking on low for 2-3 minutes until melted.
  10. Garnish the soup with parsley and extra Parmesan before serving.

Notes

For a spicier version, use hot Italian sausage and increase red pepper flakes. Can also stir in greens like baby spinach for added nutrition.
