Description
A one-pan meal featuring tender sirloin steak bites in a creamy Parmesan garlic sauce, perfect for busy evenings.
Ingredients
Scale
- 1 pound sirloin steak, cut into 1-inch bite-sized pieces
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/4 cup low-sodium beef broth
- 1 cup heavy cream
- 1/2 cup finely grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare the steak. Pat the sirloin pieces thoroughly dry with paper towels. Season with salt and pepper and let stand for 10 minutes.
- Heat the skillet. Place a 12-inch skillet over medium-high heat for 2 minutes. Add olive oil and swirl it across the bottom.
- Sear the first side. Arrange steak bites in one layer and cook undisturbed for 2 minutes.
- Finish searing. Turn and cook for another 1 to 2 minutes. Check temperature and remove at 125°F to 130°F for medium-rare.
- Start the garlic butter. Reduce heat to medium, add 3 tablespoons of butter, and stir in minced garlic and thyme. Cook until fragrant.
- Deglaze the pan with beef broth. Scrape the bottom of the skillet to release browned bits and simmer for 1 to 2 minutes.
- Make the cream sauce. Lower heat and add heavy cream and garlic powder. Simmer gently for 2 minutes.
- Add the cheese. Gradually stir in grated Parmesan until melted and smooth.
- Finish the dish. Return steak and juices to the skillet. Toss for 1 minute until warm and coated. Sprinkle with parsley before serving.
Notes
Serve immediately over pasta, rice, or potatoes. Pairs well with steamed vegetables.
