- 1 pound ground beef or Italian sausage
- 1/2 cup almond flour
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- Fresh basil for garnish
Instructions
- In a large mixing bowl, combine the ground meat, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well blended.
- Shape the mixture into meatballs, aiming for about 1 inch in diameter.
- Heat a skillet over medium heat and add the olive oil. Once hot, gently place the meatballs in the skillet, cooking until browned on all sides, about 6-8 minutes.
- Remove the meatballs from the skillet and set them aside.
- In the same skillet, pour in the heavy cream and add the grated Parmesan cheese, spinach, and sun-dried tomatoes. Stir to combine.
- Return the meatballs to the skillet and simmer in the creamy sauce for about 10 minutes.
- Garnish with fresh basil and serve warm.
Notes
These meatballs freeze beautifully; cook beforehand, cool, and store in airtight containers.
