Description

Deliciously comforting low-carb meatballs in a creamy Tuscan sauce, perfect for a family dinner.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1/2 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • Fresh basil for garnish

Instructions

  1. In a large mixing bowl, combine the ground meat, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well blended.
  2. Shape the mixture into meatballs, aiming for about 1 inch in diameter.
  3. Heat a skillet over medium heat and add the olive oil. Once hot, gently place the meatballs in the skillet, cooking until browned on all sides, about 6-8 minutes.
  4. Remove the meatballs from the skillet and set them aside.
  5. In the same skillet, pour in the heavy cream and add the grated Parmesan cheese, spinach, and sun-dried tomatoes. Stir to combine.
  6. Return the meatballs to the skillet and simmer in the creamy sauce for about 10 minutes.
  7. Garnish with fresh basil and serve warm.

Notes

These meatballs freeze beautifully; cook beforehand, cool, and store in airtight containers.
