- 10 ounces bowtie pasta
- 1¼ pounds ground beef
- 1 tablespoon olive oil
- 1¼ small onion, diced
- 2–3 cloves garlic, minced
- 1¼ cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup Velveeta cheese, cubed
- ⅔ cup heavy cream or milk
- 1¼ teaspoons Italian seasoning
- ¾ teaspoon paprika
- Salt and black pepper, to taste
- ¾ cup shredded mozzarella or cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the bowtie pasta in a pot of salted water until al dente, then drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and sauté until it softens and turns golden.
- Add the ground beef, breaking it up as it cooks. Season with salt, pepper, paprika, and Italian seasoning, and let it brown.
- Stir in the garlic and cook briefly until fragrant.
- Pour in the beef broth and diced tomatoes, stirring to combine. Allow to simmer gently.
- Add the Velveeta and heavy cream, stirring to create a smooth cheese sauce.
- Mix in the cooked pasta until coated with the sauce. Thin it out with a splash of milk or broth if needed.
- Sprinkle the mozzarella or cheddar on top, cover until melted, or broil briefly for a bubbly finish.
- Garnish with fresh parsley just before serving.
