- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup buffalo hot sauce

- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped
- 12 oz rotini pasta
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1/2 cup whole milk
- 6 oz Velveeta cheese, cubed
- 4 oz cream cheese, softened
- 1 1/4 cups shredded provolone cheese
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Start by cooking the rotini in a large pot of salted boiling water until al dente. Drain the pasta and set it aside.
- Pat the chicken pieces completely dry with paper towels. Season them with garlic powder, salt, and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the chicken in a single layer and cook for 4 minutes per side or until golden brown and cooked through.
- Add minced garlic to the skillet and cook for an additional 30 seconds until fragrant. Then, pour the buffalo hot sauce over the cooked chicken and toss until each piece is well-coated.
- Transfer the chicken to a plate and sprinkle it with fresh parsley for garnish.
- In the same skillet, melt the remaining 3 tablespoons of butter, then add 3 minced garlic cloves and sauté for 30 seconds.
- Carefully pour in the heavy cream and whole milk, letting it simmer for 3 minutes while stirring.
- Add the cream cheese and whisk until smooth and blended. Gradually add the Velveeta cheese, stirring until melted and creamy.
- Mix in the provolone and freshly grated Parmesan until the sauce becomes thick, glossy, and cheesy. Season with Italian seasoning and additional salt and pepper to taste.
- Toss the cooked rotini in the sauce, ensuring every spiral is coated. Plate the rotini on one side of a dish and arrange the buffalo chicken on the other side. Garnish with more parsley if desired.
Notes
For a creamier dish, feel free to add more heavy cream until you reach your desired consistency.
