- 12 oz rigatoni pasta
- 1 lb sirloin steak, thinly sliced into strips
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 1/2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp salt (or to taste)
- 3/4 cup heavy cream
- 1/2 cup beef broth
- 3 oz Velveeta cheese, cubed
- 1/2 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 2 oz cream cheese, softened
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook the rigatoni until just tender. Drain and set aside.
- Season the steak strips with Cajun seasoning, smoked paprika, salt, and black pepper, coating them evenly.
- Heat olive oil with 2 tablespoons of butter in a large skillet over medium-high heat. Add the steak and cook quickly until browned with lightly crisp edges. Transfer to a plate.
- Lower the heat to medium and melt the remaining butter. Add the garlic and cook briefly until fragrant.
- Pour in the beef broth and heavy cream, stirring gently while lifting the flavorful bits from the pan.
- Add the Velveeta and stir until melted, then mix in mozzarella, Parmesan, and cream cheese. Continue stirring until the sauce becomes smooth and slightly thick.
- Stir in the garlic powder to deepen the flavor.
- Add the cooked rigatoni and toss until every piece is coated in the sauce.
- Add the steak back in and gently mix, letting everything warm together for a minute.
- Finish with chopped parsley and serve hot.
Notes
Feel free to swap out the sirloin steak for shrimp or add sautéed bell peppers for extra flavor and nutrition. Store leftovers in an airtight container in the fridge for up to four days.
