A comforting Chicken Burrito Casserole packed with flavor from shredded chicken, black beans, corn, salsa, rice, and melted cheese.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheese (cheddar or Mexican blend)
- Tortilla chips (optional for topping)
- Fresh cilantro (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chicken, black beans, corn, salsa, rice, chili powder, and cumin in a large bowl. Mix until well combined.
- Spread half of the mixture in the bottom of a greased casserole dish.
- Sprinkle half of the cheese over this layer.
- Add the remaining chicken mixture on top.
- Top with the rest of the cheese and crushed tortilla chips.
- Bake for 25-30 minutes, or until cheese is bubbly and golden brown.
- Remove from the oven and let sit for a few minutes. Garnish with cilantro before serving.
Notes
Use leftover rotisserie chicken for a quicker prep. Assemble ahead of time and store in the fridge for up to 24 hours before baking.
