- 12 oz spaghetti
- 1 lb boneless, skinless chicken breasts, sliced into thick strips
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 1/2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup chicken broth
- 3 oz Velveeta cheese, cubed
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 oz cream cheese
- 1/2 tsp onion powder
- 1/4 tsp crushed red pepper flakes (optional)
- 1 tsp lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Bring salted water to a boil and cook spaghetti until tender. Drain and set aside.
- Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil and 2 tbsp butter in a skillet. Add chicken and cook until browned.
- Lower the heat and add remaining butter. Cook garlic until fragrant.
- Add chicken broth, heavy cream, and milk. Stir to combine.
- Mix in Velveeta cheese until melted, then add cheddar, Parmesan, and cream cheese.
- Sprinkle onion powder and red pepper flakes; add lemon juice.
- Toss spaghetti in the sauce, adding reserved pasta water if necessary.
- Add chicken back in and mix gently until warmed.
- Serve hot, garnished with parsley and extra Parmesan if desired.
Notes
For a lighter option, substitute chicken with shrimp or cubed firm tofu. Add sautéed veggies for extra nutrition.
