  • 1 1/2 lbs boneless skinless chicken breasts, sliced thick
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 3/4 cup shredded sharp cheddar cheese
  • 3/4 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti in salted water until tender, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Season the sliced chicken breasts with Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until it is golden-brown and crispy. Transfer the chicken to a plate and let it rest.
  4. Reduce the heat to medium. In the same skillet, melt the remaining butter. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer.
  6. Add the cream cheese, stirring continuously until it is completely smooth and incorporated into the sauce.
  7. Gradually stir in the grated Parmesan, cheddar, and mozzarella cheese until the sauce becomes ultra-thick, glossy, and stretchy.
  8. Add the spaghetti to the skillet, tossing it until every strand is heavily coated in sauce. Utilize the reserved pasta water if necessary to achieve your desired thickness.
  9. Slice the rested chicken and arrange it on top of the pasta.
  10. Garnish with fresh parsley and an extra sprinkle of Parmesan cheese. Serve immediately.

Notes

Make sure to cook your chicken until it reaches an internal temperature of 165°F. Reserve extra pasta water to adjust sauce consistency if needed.
