- 3 pounds potatoes, cut into 1-inch pieces
- 3 tablespoons olive oil
- 1½ teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 6 cloves garlic, minced
- ¼ cup finely chopped chives or thinly sliced green onions (divided)
- ¼ cup finely chopped Italian parsley (divided)
- ½ cup Parmesan cheese
Instructions
- Preheat your oven to 425°F (220°C).
- Place the cut potatoes on a large baking sheet.
- Drizzle with 2 tablespoons of olive oil and sprinkle with minced garlic, 1 teaspoon of kosher salt, and ½ teaspoon of black pepper.
- Toss the potatoes with your hands until well coated with the oil and seasonings.
- Roast the potatoes in the oven for about 30 minutes, until they start to turn golden brown.
- Use a spatula or tongs to stir the potatoes, promoting even cooking.
- Continue roasting for an additional 15 minutes, or until they are lightly browned and crisped.
- Increase the temperature to broil.
- Mix together the remaining 2 tablespoons of parsley, 2 tablespoons of chopped green onions, and the Parmesan cheese in a bowl.
- Sprinkle the cheese mixture over the potatoes and toss to coat evenly.
- Spread the potatoes back across the sheet pan in a single layer and return to the oven.
- Broil for 4-5 minutes until the cheese has melted and turned golden brown.
- Remove from the oven and sprinkle with the remaining herbs before serving.
Notes
Soak potatoes in water for 30 minutes for extra crispiness.
